Team Murdoch ‘meats’ the competition July 11, 2012 Murdoch University Animal and Veterinary Science students have returned victorious from the Australian Intercollegiate Meat Judging (ICMJ) Association conference in Wagga Wagga, NSW. Held July 3 – 8 at Charles Sturt University and Teys Australia, the conference saw Team Murdoch announced as champions of pork judging, primal and retail cut identification and eating quality evaluation. The contingent came second in the overall championship, edged out by the University of Melbourne by a mere seven points. According to Dr Graham Gardner of Murdoch’s School of Veterinary and Biomedical Sciences, the week’s four-day workshop program gave students exposure to the fundamentals of meat science, provided practical knowledge of consumer demand and increased their decision-making confidence. “The conference not only allowed students to learn practical skills from some of the leaders in the industry, it made them aware of the high demand in the meat and livestock industry for enthusiastic graduates,” Dr Gardner said. “The conference is a great opportunity for students, and our team is fortunate to have support from WA companies such as Linley Valley Pork, Harvey Beef, Wellard and the Royal Agricultural Society of WA.” Dr Gardner presented a workshop on the importance of lean meat yield, preparing high and low yielding lambs to show the economic impact of trimness and muscling. ICMJ Association president Michael Crowley said he had never seen a more exciting competition and was very impressed with the quality of this year’s participants. “The students really engaged with the industry representatives and certainly made the most of their time in Wagga Wagga,” he said. The (ICMJ) Association conference attracted over 100 students from eight universities across Australia as well as a team from the University of Illinois and the Japanese national team.
